Chocolate meringues



Ingredients
6 egg whites
1 1/3 cups caster sugar
2 tablespoons cocoa, sifted
1 teaspoon balsamic vinegar

1. Pre-heat oven on Fan Plus at 140°C.
2. Line baking trays with baking paper.
3. In a large bowl whisk egg whites until soft peaks form. Gradually beat in the sugar a tablespoon at a time until meringue is stiff and shiny.
4. Sprinkle cocoa and vinegar over the meringue and fold in gently.
5. Spoon mounds of meringue (about the size of small apples) onto baking paper.
6. Bake 40 minutes. Remove from oven and cool on trays.


Makes approx 14

Note: Delicious served with Steamed Berry Sauce and cream.
