Eggs florentine
Ingredients
2 cups baby spinach leaves
½ punnet cherry tomatoes, halved
8 - 10 eggs
Black pepper
¾ cup grated cheese
1. Lightly grease solid stainless steel tray (32cm 26cm) or a 28cm flan dish or individual ramekins.
2. Place spinach in base of tray and scatter with tomatoes.
3. Crack eggs over the spinach. Season and top with grated cheese.
4. Steam 100ºC for 5 minutes or until eggs are set.
Serves 4-6
Variations: Add smoked ham, salami, smoked salmon, sliced mushrooms or fresh herbs.
Note: Food in porcelain dishes will take longer to cook than stainless steel.
