Sticky date pudding

Ingredients
1 cup pitted dates, chopped
1 teaspoon bicarbonate of soda
300ml boiling water
60g butter, softened
¾ cup caster sugar
2 eggs, lightly beaten
½ teaspoon vanilla
1¼ cups self raising flour

1. Place dates and soda in a large bowl. Pour boiling water over dates and set aside.
2. In a bowl combine butter and sugar, mix well. Stir in eggs and vanilla until well blended.
3. Fold in flour, dates and liquid.
4. Spoon into 12 lightly greased ½ cup muffin tins. Cover.
5. Place on rack on shelf position 1.
6. Steam 100ºC for 15 minutes or until cooked when tested.



Makes 12 puddings


Note: Makes 16 Chinese Tea Cups. Steam 100ºC for 15 minutes or until cooked when tested.
Note: For the smaller steam ovens. Place rack on shelf position 1 and an upturned perforated tray on shelf position 3, this acts a second rack.
